KALE & ALMOND SALAD

untitledIngredients:

1 bunch fresh organic kale

2 carrots diced or grated

sliced or diced almonds or walnuts

1 lime

teaspoon grated ginger

1/4 cup macadamia oil

 

Method:

Wash and drain excess water from kale.

Slice cutting through the kale to bite size chinks.

Peel and dice the carrots, add to kale in a bowl, add in the nuts.

Dressing:

Squeeze half a lime into a bowl add grated ginger, macadamia oil, lightly coating the leaves. Mix/stir evenly, serve as a side with your favorite protein meal. Enjoy!
