Ginger and Garlic Prawns

Ingredients

1 chopped onion
1/2 teaspoon oil
2 cups of washed, peeled and drained prawns
2 teaspoons of ginger
2 cloves garlic chopped
1 teaspoon coriander powder
mixed vegetables of your choice
1/2 cup of water if needed while cooking

Method
Heat a stir-fry pan with 1/2 teaspoon of oil.
Add the chopped onions until tender add prawns
Cook for 8 minutes, then add the garlic ginger and coriander powder, cook for 5 minutes, then add the vegetable mix and cook until tender. Add 1/2 cup of water if needed.
Serve on a bed of white rice or with salad.
